Okay, so this ones for all of y'all who either don't have the time or can't be trusted in the kitchen- meaning this recipe is easy, quick + tasty.
Because we are newlyweds, our kitchen was just #blessed with many new appliances. We've got ourselves an insta-pot and now that i'm familiar, I honestly won't go back to the ole' crockpot. I just don't have the patience! But for those of you who don't have a insta-pot, I'll specify instructions for a crock pot when prepping this recipe as well.
- 4 cups Chicken bone broth (I used this brand- certified organic!) If you don't have access to bone broth, you can use chicken broth
- 1 lb chicken breast (thawed worked best for me)
-1 can chopped tomatoes
-1 can black beans
-1 can sweet corn
-1/4 cup of sliced jalapeños (minimize or leave out if you do not like spice)!
-1tsp each of the following: cumin, paprika, oregano, garlic salt, chili powder
-Four cheese blend
-Green scallion onions
- Tortilla chips
- Hot sauce for an added kick!
You can't mess it up! Dump it all in.
My advice, add bone broth first and beans and corn last. Don't even mix together.
*I cooked mine on high pressure for 8 minutes. Thats all. (see what I mean? Too convenient not to love)
You can cook on low heat for 8 hours or high heat for 4 hours. Are you convinced that an insta-pot is the way to go yet? If not, no worries, more insta-pot recipes to come! :)
After the 8 mins, I took the chicken breasts out, shredded the meat with two forks and then placed the meat back into the pot and stirred all ingredients together. After allowing some time to cool, I scooped out soup into bowls and topped it with the ingredients listed above.
It's not only delicious, but it's great for feeding a lot of people or using for meal prepping purposes. This recipe serves six bowls this size. That's a great bang for your buck when you add it all up!
